Cubes of fresh paneer are marinated in yogurt and tandoori spices, charred in the tandoor for a smoky edge, then folded into a velvety tomato-onion-cashew gravy enriched with fresh cream, kasuri methi and a spoonful of pure desi ghee. The vegetarian counterpart to our butter chicken - and just as iconic.
We use fresh, soft paneer - never the rubbery pre-packed kind. Each cube is marinated in yogurt, ginger-garlic, tandoori masala and a touch of mustard oil, then skewered and charred in the tandoor for that smoky, slightly crisp edge.
The gravy is the same makhani-style base we use for our butter chicken - vine-ripened tomatoes, cashews, butter, cream and pure desi ghee, finished with crushed kasuri methi for that unmistakable Punjabi aroma. The charred paneer is folded in just before serving so it stays soft.
