The dosa is so important to us, it is in our name. Our batter is made fresh on site - rice and urad dal, soaked, ground and naturally fermented overnight - giving the dosa its signature subtle tang and lacy, crisp finish.
Each dosa is spread thin on a screaming-hot tava and cooked until just shy of golden, then filled with a fragrant potato masala tempered with mustard seeds, curry leaves, onions, ginger and turmeric. Served with steaming sambar and three chutneys - coconut, tomato and mint - exactly the way it is served in South India.
A real masala dosa needs naturally fermented batter and the right tava temperature - which is why most Indian restaurants in Calgary that focus on Punjabi food do not do dosa well. We do. The crisp, the tang, the warm masala - it is all there in every plate.
