Hand-stretched naan dough is slapped onto the wall of our scorching-hot tandoor, where it puffs up in seconds. As soon as it comes out, we brush it generously with melted butter, freshly chopped garlic and chopped coriander. The result is soft, smoky, blistered and irresistible - the perfect partner for any of our gravies.
Naan is only as good as its tandoor, and ours runs hot 24 hours a day. The dough is made in small batches, hand-stretched and slapped onto the inside wall of the clay tandoor where it cooks in under a minute - puffing up dramatically and picking up those characteristic blistered black spots.
Out of the tandoor, every naan gets a generous brush of melted butter, a scatter of freshly minced garlic and a sprinkle of chopped coriander. We tear off a corner and taste before sending it out - if it is not pillowy soft and properly blistered, it does not leave the kitchen.
