Channa Bhature is breakfast, lunch and comfort food rolled into one - and we make it the way Amritsari halwais have for generations. Our chana is soaked overnight, then slow-cooked with onions, tomatoes, ginger, garlic and a freshly-roasted chana masala for that deep, almost-blackened colour and flavour.
The bhature dough is rested with yogurt and a touch of semolina so it puffs up dramatically when it hits the hot oil - thin, blistered and pillowy. We serve everything together with sliced onions, pickled chillies and a wedge of lemon, exactly as it would be served in Punjab.
Real channa bhature requires patience - the chana must be slow-cooked, the dough must be rested, and the bhature must be fried to order. We do all three, every time. The result is a plate that is genuinely satisfying, not the watery, deflated version most places serve.
